TAMALE PIE
1–2 lbs ground beef
1 taco sea­so­ning pac­ket
2 cans refried beans
1 can mild enchi­lada sauce
8 oz. ched­dar cheese
Tor­ti­lla chips or burrito shells
Sour cream

Brown ground beef and add taco sea­so­ning pac­ket. Cook meat accor­ding to direc­tions on pac­ket. Put ground beef in bot­tom of rec­tan­gu­lar glass cas­se­role dish. Put the two cans of refried beans on top of ground beef. It may not look pretty but don’t worry. Top with enchi­lada sauce and then add cheese. Cook in the oven at 350 for thirty minu­tes. Serve over tor­ti­lla chips or use it as a filling for burri­tos. (I put mine on top of either let­tuce or spi­nach lea­ves if I am trying to be good). Add a dollop of sour cream if you’d like.
