Chicken in a Pot-Crockpot

1 chicken, 3 lb whole or cut up
2 carrots, sliced
2 onions, sliced
2 celery stocks with leaves cut in 1 inch pieces
2 tsp salt
1/2 tsp course black pepper
1/2 cup water, chicken broth, or white wine
1/2 — 1 tsp basil
Put 1/2 of carrots, onions, and celery in bottom of crock-pot. Add whole chicken or chicken pieces. Top with salt, pepper, liquid, and remaining half of vegetables. Sprinkle basil over top. Cover and cook until done, low 7 — 10 hours, high (add additional 1/2 water) 2 1/2 — 3 hours.
