Chicken in a Pot-Crockpot

1 chic­ken, 3 lb whole or cut up
2 carrots, sli­ced
2 onions, sli­ced
2 celery stocks with lea­ves cut in 1 inch pie­ces
2 tsp salt
1/2 tsp course black pep­per
1/2 cup water, chic­ken broth, or white wine
1/2 — 1 tsp basil

Put 1/2 of carrots, onions, and celery in bot­tom of crock-pot. Add whole chic­ken or chic­ken pie­ces. Top with salt, pep­per, liquid, and remai­ning half of vege­ta­bles. Sprin­kle basil over top. Cover and cook until done, low 7 — 10 hours, high (add addi­tio­nal 1/2 water) 2 1/2 — 3 hours.
