Deceptively Delicious

Did any of you see this seg­ment on Oprah this week? Jes­sica Sein­feld wrote a cook­book, Decep­ti­vely Deli­cious, tar­ge­ted at moms who want their chil­dren to eat healthier.

Basi­cally, she purees various vege­ta­bles once a week, refri­ge­ra­tes them in Ziploc bags and then pours the puree into her recipe. So she puts broc­coli puree in her chic­ken nug­gets recipe. Scram­bled eggs have cau­li­flo­wer added.

I think she is genius! I’m going out tomo­rrow to buy the book and I’ll let you know how it goes!

Flank Steak Salad Review

Last week I made Flank Steak Salad, sub­mit­ted by Jen­ni­fer Play­grou­pie.

Flank Steak Salad

Let’s just say that Hubby enjo­yed this recipe so much that he asked me to make it again after just the first bite. It was a win­ner in our home!

I mari­na­ted the meat by sprin­kling fajita sea­so­ning on top of the flank steak a day ahead of time. We gri­lled the meat and then cut it into small pie­ces. We loa­ded the salad (I used spi­nach) with the ingre­dients below.  It made the per­fect din­ner meal!

I figu­red out the point value for this meal below.

I highly encou­rage you to make this very, very easy and deli­cious dinner!

Mari­nate flank steak with fajita seasonings,

slice it up after it’s coo­ked (BBQ or broiled)

serve on salad

  • sour cream 2 tbsp/serving
  • gua­ca­mole 2 tbsp/serving
  • black beans 1/4th cup/serving
  • cheese 2 tbsp/serving
  • salsa 2 tbsp/serving
  • flank steak 8 oz cooked/serving

Scones, yummy scones.

One of my very favo­rite reci­pes I’ve accu­mu­la­ted recently is Sim­ple Sco­nes.  I got it from Allrecipes.com. The only two things out of the ordi­nary that you’ll need in order to impress your family are 1/2 cup of sour cream (I choose lite sour cream) and one stick of fro­zen butter.

Once the dry ingre­dients are mixed you can vir­tually add any type of dried fruit to the mix. Lately I’ve been making them with dried apri­cots. Tomo­rrow mor­ning I’ll use rai­sins as my fruit of choice, but anything will suf­fice. It’s so easy to make and deli­cious to eat!  Your family will be quite impressed.

INGREDIENTS

* 2 cups all-purpose flour
* 1/3 cup sugar
* 1 teas­poon baking pow­der
* 1/4 teas­poon baking soda
* 1/2 teas­poon salt
* 8 tables­poons unsal­ted but­ter, fro­zen
* 1/2 cup rai­sins (or dried currants)
* 1/2 cup sour cream
* 1 large egg
