Did any of you see this segment on Oprah this week? Jessica Seinfeld wrote a cookbook, Deceptively Delicious, targeted at moms who want their children to eat healthier.
Basically, she purees various vegetables once a week, refrigerates them in Ziploc bags and then pours the puree into her recipe. So she puts broccoli puree in her chicken nuggets recipe. Scrambled eggs have cauliflower added.
I think she is genius! I’m going out tomorrow to buy the book and I’ll let you know how it goes!

Last week I made Flank Steak Salad, submitted by Jennifer Playgroupie.
Let’s just say that Hubby enjoyed this recipe so much that he asked me to make it again after just the first bite. It was a winner in our home!
I marinated the meat by sprinkling fajita seasoning on top of the flank steak a day ahead of time. We grilled the meat and then cut it into small pieces. We loaded the salad (I used spinach) with the ingredients below. It made the perfect dinner meal!
I figured out the point value for this meal below.
I highly encourage you to make this very, very easy and delicious dinner!

One of my very favorite recipes I’ve accumulated recently is Simple Scones. I got it from Allrecipes.com. The only two things out of the ordinary that you’ll need in order to impress your family are 1/2 cup of sour cream (I choose lite sour cream) and one stick of frozen butter.
Once the dry ingredients are mixed you can virtually add any type of dried fruit to the mix. Lately I’ve been making them with dried apricots. Tomorrow morning I’ll use raisins as my fruit of choice, but anything will suffice. It’s so easy to make and delicious to eat! Your family will be quite impressed.

* 2 cups all-purpose flour
* 1/3 cup sugar
* 1 teaspoon baking powder
* 1/4 teaspoon baking soda
* 1/2 teaspoon salt
* 8 tablespoons unsalted butter, frozen

* 1/2 cup sour cream
