One of my very favo­rite reci­pes I’ve accu­mu­la­ted recently is Sim­ple Sco­nes.  I got it from Allrecipes.com. The only two things out of the ordi­nary that you’ll need in order to impress your family are 1/2 cup of sour cream (I choose lite sour cream) and one stick of fro­zen butter.

Once the dry ingre­dients are mixed you can vir­tually add any type of dried fruit to the mix. Lately I’ve been making them with dried apri­cots. Tomo­rrow mor­ning I’ll use rai­sins as my fruit of choice, but anything will suf­fice. It’s so easy to make and deli­cious to eat!  Your family will be quite impressed.

INGREDIENTS

* 2 cups all-purpose flour
* 1/3 cup sugar
* 1 teas­poon baking pow­der
* 1/4 teas­poon baking soda
* 1/2 teas­poon salt
* 8 tables­poons unsal­ted but­ter, fro­zen
* 1/2 cup rai­sins (or dried currants)
* 1/2 cup sour cream
* 1 large egg

• When Hubby and I met, I was his RA at college in the on-campus apart­ments. Enough said.

Now why, WHY can’t I get my two year old son to just close the frea­king door when I ask him to?

BC: “Actually Mommy, I’m just going to leave it a little bit open.”

Smi­ling Mom: “Please shut the door.”

BC: “No, I said that I’m going to leave the door open!”

SM: “Shut the door.”

BC: “But Mom I’m”

SM “Shut-the-door. Shut it!!”

I’m the boss! I’m the boss! Now, if someone would mind infor­ming my chil­dren of this fact?

Tonight Grandpa and BC are ‘cam­ping’. They pulled out slee­ping pads, and lots of blan­kets and will be slee­ping on the deck under the stars. They made smo­res and are now on a nature hike with their flash­lights. How cool is that?!
